The Cake of the Summer
Strawberry Cake
(adapted from Martha by Smitten Kitchen, stolen by me)
Need an easy cake? Need a potluck cake? Need a cake you can eat for breakfast?
Here's what you do.
Preheat oven to 350 degrees. Butter a 9 & 1/2 inch pie plate (or 10 if you have it). De-stem and cut in half 1 lb strawberries.
In a small mixing bowl, whisk together and set aside:
1 & 1/2 C flour
1 & 1/2 t baking powder
1/2 t salt
In a mixer or large bowl:
Cream 6 T room temperature unsalted butter with a little less than a cup of sugar (3 minutes)
Add one egg, 1/2 C milk, and 1 t vanilla extract and mix until combined
Add flour mixture slowly until just combined
Taste the batter. Isn't it delicious?
Pour batter into pie plate and arrange strawberries on top. Sprinkle 1 T sugar over top.
Bake for 10 minutes at 350, then lower heat to 325 for 50-60 minutes. Should be golden brown on top. Let cool.
Notes:
You can put any fruit on top of this cake, I think. Maybe nothing too watery. I've done it with sour cherries and I've put rhubarb inbetween the strawberry slices. Both were delicious.
